Established in 2000, the Chinese Cuisine Training Institute (CCTI), located at the Pokfulam Training Centre Complex, is a member of Vocational Training Council. The CCTI provides systematic training in Chinese Cuisine to beginners and practicing chefs in the industry who wish to obtain or upgrade their qualifications. By providing certificate courses at different levels and systematic study paths, the CCTI aims to elevate the professional status of Chinese Chefs as well as the quality and hygiene standard of Chinese cuisine in Hong Kong.

In addition to vocational training courses, the CCTI aims to offer a mix of training and tourism elements to the general public and tourists. To capitalise on the world's fascination with the Chinese culture, the CCTI offers culinary interest courses in the demonstration kitchen. It also features a training restaurant serving the eight Chinese provincial cuisines to enhance the Institute's tourist appeal. It is envisioned that the CCTI will enrich the cultural diversity of Hong Kong by actively promoting the deep-rooted heritage and traditions of Chinese culinary art.
